The Sofitel Philadelphia is pleased to announce a comprehensive renovation of menu and décor to its Chez Colette restaurant. Customers will find a more intimate, authentic version of the brasserie atmosphere. The casually elegant restaurant is reminiscent of and beckons patrons to 1930s south of France. Gold script on Parisian-styled red awnings shadow the large windows of the lively, Mediterranean restaurant where the art of French cooking is accented with light, popular flavors and modern ingredients.
Just as French author Colette was a classic French woman with contemporary writings, so is Chez Colette, “at the home of Colette,” a traditional 1930s French brasserie with fresh, innovative cuisine.

Edward Hancock
Executive Chef Edward Hancock arrives at Sofitel Philadelphia with more than nineteen years of restaurant management experience in some of the Philadelphia area’s finest kitchens. Chef Hancock studied Culinary Arts at The Philadelphia Restaurant School where he gained exposure to fine dining and the luxury hospitality industry.

Chef Hancock’s rustic, refined, and accessible style of contemporary cuisine will transform the restaurant menus in Sofitel Philadelphia’s Chez Colette and Liberté Lounge. Inspired by his roots growing up on a farm in Lower Gwynedd Township, he will fuse distinctive French ingredients with local and seasonal fare using herbs, vegetables and honey produced in Sofitel’s rooftop garden and bee hives.
